Weekly Meal Plan


I don't have any pics this week, but some yummy meals!

Monday-We had Chicken Stuffed Peppers. There are always a favorite around here!

I haven't made these in awhile, but they are yummy! And it made enough for leftovers, too!

Wednesday-Leftover stuffed shells

These are delicious and SUPER easy!

Friday-Pizza! ;)

Saturday- Out to eat

Sunday- We had these ravioli. Hudson (us, too) loves these!

Weekly Meal Plan

Meal planning is going well, so far! We had some yummy meals this week!

Monday- I made Beagle Bagel chicken salad! This is a restaurant from Jackson that I miss so much! This recipe tastes so close to it! I served it with crackers and fruit.
Definitely not the best picture! But this stuff is AMAZING!

This was pretty good. I definitely wouldn't rate it as my favorite, but it was easy and filling so it's likely I'll make it again. I served it on top of brown rice and I also added more pineapples.
 

This was the hit of the week! I've heard everyone talk about the full fat version of this recipe, so I was excited to try this lighter version. It was delicious! Trey and I both loved it. Plus, it made enough for leftovers, too, which I wasn't anticipating!


Thursday- Leftover Spicy Sausage Pasta
This was even good as a leftover!

Friday- Pizza night

Saturday-We typically go out on Saturdays, but it was cold and rainy so we stayed home. I made nachos.

Sunday-Gnocchi 
I haven't been able to find gnocchi in forever, so I was glad to have this. Easy, yummy, and filling!

Weekly Meal Plan

Monday- We ate out since it was a holiday!

These turned out so yummy! I used pita pockets and this cucumber dill dip for the sauce. I served it with a Greek salad!
 Wednesday- I had planned to make Doritos Taco Salads, but I didn't have enough lettuce. So, I improvised and just kind of made something up! It ended up being pretty good and was filling. 

I cooked ground beef and added black beans and a jar of salsa. I layered Doritos on the bottom of the casserole dish. Then, I added the meat mixtures. Topped with shredded cheese and then more crushed Doritos. Bake for about 20 minutes. I served it with brown rice, so it ended up being kind of like a burrito bowl.
 Thursday- I made Crockpot Broccoli Cheddar Soup. This was pretty good! It was my first time making this. I did have to add about 1/2 cup of flour at the end to thicken it up a bit. I didn't serve anything with this and I think if I made it again I would make a panini or baked potato with it!
Friday-Like usual, was pizza night! Again, we had Papa Murphy's deLite pizza.

Saturday- We love going out to eat on Saturdays!

Weekly Meal Plan

I'm going to try to start posting the meals we've eaten each week in an effort to help me with meal planning! So, here's what we ate last week!

This was SOOO good! Definitely will make this again! We topped it with sour cream, cheese, and a few Fritos! It made great leftovers, too!

Tuesday-leftovers

Wednesday- I had Bunco! So, no cooking for me!

Thursday- Shrimp and Grits
This has been a new dish that I've made the last two weeks and it's delicious and easy!
I just use the Five Minute grits. I cook them in the microwave and when they are finished I add a tablespoon of butter and 1 cup of cheese. Stir until the cheese has melted and combined. Then, I use frozen precooked shrimp that I've thawed. I heat up a little butter and garlic in the skillet on medium. Then, I toss the shrimp for a bit. Not too long, since they're already cooked. Then, top the grits with the shrimp! That's it! It's so yummy!

Friday- Pretty much always pizza night! Lately, we've been getting Papa Murphy's deLite cheese pizza because it's so much healthier and it's really yummy!

Saturday- Out

Sunday-Breakfast 
I made chocolate chip banana muffins, omelets, and bacon.

 I even had a cute sous chef for these! :)

I try to use the same pattern each week. This makes planning a lot easier!

Monday-Thursday: cook, leftovers at least one day
Friday- Pizza
Saturday- out
Sunday- some type of breakfast for dinner

Chicken Stuffed Peppers

Ingredients
3 bell peppers
2 cups brown rice, cooked
3 chicken breasts, shredded (I usually cook these in the crockpot for about 3 hours. Cover with water and sprinkle a little dry Lipton French Onion mix on top.)
1/2 jar of spaghetti sauce
1/4 cup diced onions (I use frozen.)
Shredded cheddar cheese


Directions
Preheat oven to 425.
Slice bell peppers in half, length wise. Remove seeds and membranes. Lay each half in casserole dish. In skillet, add tbs olive oil. Add shredded chicken, diced onion, rice, and spaghetti sauce to skillet. Combine and let cook just for a few minutes. Sometimes, I add a little cheese to the mixture here, too! Scoop mixture into bell peppers. Top with cheese. Bake for about 40-60 minutes or until bell peppers are tender.

These are a weekly staple at our house!

Oreo Mint Chocolate Chip Ice Cream Pie

Ingredients

Mint Chocolate Chip Ice Cream
20-30 Oreo cookies, crushed
4 tbsp melted butter
Hot fudge
For garnish: Green M & M's

Directions
Set carton of ice cream on counter to allow it to soften while constructing the pie.

Crush Oreos in Ziploc with rolling pin. Add melted butter to Oreos in bag and mix. Press cookie mixture into bottom of pie plate. Refrigerate or freeze crust for about 30 minutes before adding ice cream. Add softened ice cream to pie plate. Freeze for about 30 minutes to an hour. When ready, top with hot fudge, crushed Oreos, and M & M's.

Shepherd's Pie

I made this for St. Patrick's day and it was so yummy and easy that I'll be adding this to our dinner rotation!

Ingredients
1 pound ground beef
1 can Cream of Mushroom
1 tbs ketchup
1/8 tsp black pepper
1 cup frozen peas and carrots
2 cups instant mashed potatoes (prepared according to box)

Directions
Preheat oven to 400. Brown beef in skillet. When cooked, add soup, ketchup, pepper, peas, and carrots to skillet. Spoon mixture into pie plate. Spoon prepared mashed potatoes on top of mixture. Bake for about 15 minutes or until potatoes are lightly browned. Optional: add shredded cheese to top and bake additional 5 minutes or until cheese is melted.

Cinnamon Roll Casserole


Ingredients

Cooking spray
2 cans cinnamon rolls
4 eggs
1/2 cup heavy whipping cream
2 tsp ground cinnamon
2 tsp vanilla


Directions
Heat oven to 375. Spray casserole dish with cooking spray. 
Cut each cinnamon roll into about 8 pieces. Place pieces in casserole dish. In a bowl, beat eggs. Combine cream, cinnamon, and vanilla and beat with eggs. Drizzle mixture over rolls. Bake about 20 minutes. When cooled, drizzle icing from cinnamon rolls on top.

Flourless Peanut Butter Chocolate Chip Cookies

Ingredients

1 cup peanut butter
3/4 cup sugar
1 egg 
1/4 tsp salt
1/2 baking soda
1 cup chocolate chips

Directions
Preheat oven to 350. Combine first five ingredients and mix. Add chocolate chips and fold in. Scoop by tablespoons, roll into ball, and place onto baking sheet. Bake about 12-14 minutes. Cool on wire rack when done.

{Eggless} Cream Cheese Chocolate Chip Cookies

These cookies are great because they are eggless! So, if you're in a pinch (like I was) and don't have eggs, you can still enjoy delicious cookies! Bonus: you can eat the dough with no worries! ;)

Ingredients:
1 cup butter, room temperature
3/4 cup sugar
3/4 cup brown sugar
8 oz block cream cheese, room temperature
2 tsp vanilla
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips

Directions:
Preheat oven to 375. Cream together butter and sugars. Add cream cheese and vanilla, mix until combined. In separate bowl, combine flour, baking soda, and salt. Slowly add flour mixture to butter and sugars. Mix well. Stir in chocolate chips. Drop by tablespoons onto baking sheet. Bake for 10-12 minutes or until golden brown.

Oven Baked Tacos

Ingredients:
Ground beef
Taco Seasoning
1 can refried beans
Salsa (I used 1/2 a jar)
Taco shells
Shredded cheese

Cook ground beef with taco seasoning. Add beans and salsa to skillet with beef. Cook on medium low for a few minutes until well combined. Fill taco shells with mixture and place in casserole dish. Top with shredded cheese. Bake for 8-10 minutes until cheese is melted.

Pesto Ranch Crockpot Chicken

Ingredients

4-6 chicken breasts
1 6 oz jar pesto
1 packet dry ranch dressing mix
1 can chicken broth

Directions
Place chicken in crockpot. Top with pesto. Sprinkle ranch mix over chicken and pesto. Add chicken broth, slightly stirring to mix ranch and pesto together. Cook on high for about 3-4 hours. I like to shred my chicken when it's done. Serve with pasta or rice. Spoon extra sauce on top.

Potato Sausage Crockpot Dinner

 Ingredients

4 medium potatoes, peeled and sliced (or I used a bag of baby Dutch potatoes)
2 medium onions, sliced into rings
1 pound kielbasa or Polish sausage (I used Turkey Sausage)
1 can cheddar cheese soup
1 can cream of celery soup
1 bag frozen peas

Directions
Slice onions, potatoes, and sausage. Spray crockpot with non-stick spray. Layer potatoes, onions, and sausage in crockpot. Cover with cheddar soup and top with cream of celery soup. Cook on high for about 4-5 hours. For the last thirty minutes, add frozen peas to cook.


All finished!
It's very hearty and delicious! Perfect for fall or winter.

Skillet Chicken Fajitas

Ingredients
2 chicken breasts
2 or 2 bell peppers (I usually use red and green.)
1 onion
3 tbsp lime juice
1 tsp ground cumin
1 tsp garlic powder
Chili powder, to taste
salt and pepper, to taste
2 tsp olive oil
tortillas

Directions
Marinate chicken with lime juice, chili powder, cumin, garlic powder, and salt and pepper. Cook chicken in skillet or on grill. For skillet, add tablespoon butter to medium high heat, cover, and cook about 5-8 minutes on each side until cooked through. In another skillet, add olive oil and chopped bell peppers and chopped onion. Cook until soft. Cut chicken into strips, add to skillet with vegetables. Serve with tortillas and garnishes.

Fruit Pizza

 Ingredients

2 rolls refreigereated sugar cookie dough
2 boxes cream cheese
2 7 oz jars marshmallow creme
Fruit (I used blueberries and strawberries)

Directions

Preheat oven to 350. Spray cookie sheet or pizza pan with baking spray. Press dough into pan to form crust. Bake 16-20 minutes until golden brown. Cool completely.
 With mixer, combine marshmallow creme and cream cheese. Spread mixture onto cooled crust. Top with sliced fruit.



Banana Pudding Poke Cake

Ingredients

1 box yellow cake mix (plus ingredients to make)
1 container cool whip
1 large box banana pudding (plus ingredients to make)
Crushed vanilla wafers

Directions

Bake cake according to box directions. Prepare pudding according to directions. When cake is finished, let cool completely. When cool, poke holes in cake with the end of wooden spoon. Pour pudding over cake, spreading into holes. Top with cool whip. Sprinkle with vanilla wafers. Serve chilled.

Stuffed Bell Peppers

 Ingredients

2 lbs ground beef
1 cup minced onion
1 cup bell peppers, diced
3 cloves minced garlic
1/4 cup cilantro, minced
1 small tomato, diced (I used canned.)
8 oz can tomato sauce
1 1/2 tsp cumin
1/4 tsp garlic powder
2 bay leaves
salt and pepper to taste

3 bell peppers
1 cup rice, cooked
cheddar cheese, shredded

Directions

Brown beef in skillet. Add salt and pepper. When no longer pink, add onions, garlic, and bell peppers. Continue to cook for 3-4 minutes. Add mixture to crockpot. Add cilantro, tomatoes, tomato sauce, 1 1/4 cups of water. Cook on high for 3-4 hours or low for about 6-8. Discard bay leaves when finished cooking.
Cut tops of bell peppers and dice. In bowl, combine rice, diced peppers, and crockpot mixture. Stuff bell peppers. Preheat oven to 350. Place peppers in casserole dish, add 1/3 cup water in bottom of dish. Cover and bake for 50 minutes. Remove foil, top with cheese, and bake for additional 5 minutes uncovered.

Lemon Poppyseed Cookies with Lemon Glaze

These cookies are made with a muffin mix and are delicious!
Ingredients
Betty Crocker Lemon Poppyseed muffin mix with glaze
1/2 cup butter, softened
2 eggs

Preheat oven to 375. Combine all ingredients and mix well. Drop tablespoonfuls of mixture on cookie sheet and bake for 10-14 minutes. Cool on rack. When cooled, drizzle glaze over each cookie. 
Enjoy with tea or a glass of milk! :)

Death by Chocolate Trifle


4 boxes (or 2 large) instant chocolate pudding

1 8 oz container Cool Whip

6 Skor or Heath bars, crushed

1 box chocolate cake mix (and ingredients for that)

1 cup Kahlua or strongly brewed coffee

Prepare cake mix according to package and bake in a 9 x 13 pan. When done, poke holes in cake and pour Kahlua or coffee on top. Let cool.

While cake cools, prepare chocolate pudding.

Crumble or tear cake into pieces.

In a trifle dish or large bowl, layer cake, pudding, Cool Whip, Heath bars and repeat. Top with Heath bars. Serve chilled.
