Then pour two cans of Rotel.
IMG_9376
Now add 1/4 cup of diced onions.
IMG_9377
and 1 clove of chopped garlic.
IMG_9379
Thankfully Pioneer Woman told me how to chop the jalapeno. First slice in half lengthwise.
IMG_9380
Then cut those in half. Now you have fourths.
IMG_9381
Then slice those into thin pieces.
IMG_9382
Add to the tomatoes.
IMG_9383
Now add, 1/4 tsp salt.
IMG_9384
And 1/4 tsp sugar.
IMG_9385
Add the juice of a lime. Use the juice of a whole lime if it's small and half of one if it is a big lime.
IMG_9388
Add cilantro.
IMG_9390
And 1/4 tsp ground cumin. Pulse until it is desired consistency.
IMG_9391
Serve with chips!

Homemade Cream Cheese Icing

I promise you want to make this! I don't have the best pictures for this, but I am telling you I could eat this with a spoon. Even my hubby, who hates icing LOVES this one. Try it!

You will need:
IMG_8785
2 lbs of confectioners powder sugar
2 sticks (1 cup) of butter, softened
2 8 oz packages of cream cheese
2 tsp. of vanilla extract

(This yields enough icing for 48 cupcakes. You can cut it half if you need a smaller amount or triple for more.)

First, cream together cream cheese and softened butter with a mixer. Add vanilla extract. Slowly add powdered sugar, until mixed to desired consistency.
IMG_8172
It is SOOOO good.
