Cinnamon Roll Casserole


Ingredients

Cooking spray
2 cans cinnamon rolls
4 eggs
1/2 cup heavy whipping cream
2 tsp ground cinnamon
2 tsp vanilla


Directions
Heat oven to 375. Spray casserole dish with cooking spray. 
Cut each cinnamon roll into about 8 pieces. Place pieces in casserole dish. In a bowl, beat eggs. Combine cream, cinnamon, and vanilla and beat with eggs. Drizzle mixture over rolls. Bake about 20 minutes. When cooled, drizzle icing from cinnamon rolls on top.

Chocolate Chip Banana Muffins

 Ingredients
1 cup granulated sugar
4 ounces butter, softened
1 1/2 cups mashed bananas
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips

Preheat oven to 350. First, cream the butter and sugar. Then, beat in the mashed bananas, eggs, and vanilla. Mix in dry ingredients and fold in chocolate chips. If making a loaf, spray loaf pan with cooking spray. If making muffins, line muffin pan with cupcake liners. For loaf, baking about 1 hour or until done in the middle. For muffins, bake for 20-30 minutes or until toothpick inserted in center comes out clean.

Sausage and Mushroom Strata

8 oz bread of choice, cut into 1 inch cubes ( I used sourdough and wheat sandwich bread.)
12 oz breakfast sausage
2 cups fat free milk
1 1/2 cup reduced fat cheddar cheese
5 large eggs
1 cup mushrooms ( I used 1 can of mushrooms.)
1/2 tsp paprika
salt and pepper
2 tbsp grated parmesan cheese


Preheat oven to 350°.
Heat a medium skillet over medium-high heat. Add sausage to pan; cook until browned, stirring to crumble. Combine milk, cheese, eggs, parmesan cheese, paprika, salt and pepper in a large bowl, stirring with a whisk. Add bread, sausage, and mushrooms, tossing well to coat bread. Spoon mixture into a 13x9-inch baking dish. Bake for about 50 minutes or unitl set and lightly browned. (You may also cover and refrigerate overnight and then bake in the morning.)

Crepes

Not really a recipe, but a meal idea.

fresh fruit
whipped cream
crepes

Other ideas, Nutella and strawberries; chocolate chips, peanut butter, banana, and whipped cream; or a savory crepe with chicken, mushrooms, and cheese. The possibilities are endless!

Hash Brown Casserole

 1 bag of Ore Ida frozen hashbrowns
1 can cream of mushroom
1 can cream of chicken
1 container light sour cream
2 cups reduced fat shredded cheese
1/2 stick melted butter

Preheat oven to 350. Combine first four ingredients and place in casserole dish. Top with butter and cheese. Bake for 30-45 minutes.

Peanut Butter Banana Muffins

Ingredients

1/2 cup butter, softened
1 cup white sugar
2 eggs
1/2 cup peanut butter
2-3 mashed ripe bananas
2 cups all purpose flour
1 teaspoon baking soda

Directions
Preheat oven to 325 degrees. Cream together softened butter and sugar in bowl. Add eggs, beat well. Stir in peanut butter, bananas, flour, baking soda until blended. Pour into muffin tins. Bake for 20-30 minutes or until done.


Yum!

You can also make this in a loaf and bake for about an hour.

Streusel Topped Blueberry Muffins


  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons all-purpose flour
  • 1 1/2 cups fresh blueberries
  • 1/2 cup butter
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon zest
  • 1/2 cup milk
  • 2 tablespoons all-purpose flour
  • 5 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter, diced
  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. Combine 2 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt in medium bowl. In a small bowl, sprinkle 1 to 2 tablespoons flour over blueberries, and set aside. (This simple trick will keep you from having "purple" batter)
  3. In a large bowl, beat 1/2 cup butter with 3/4 cup sugar until light and fluffy. Beat in eggs, and stir in vanilla and lemon zest. Fold in dry ingredients alternately with milk. Fold in blueberries. Remember, fold gently, don't stir. Spoon batter into prepared cups.
  4. Combine 2 tablespoons flour, 5 tablespoons sugar ,and 1/2 teaspoon cinnamon in a small bowl. Cut in 2 tablespoons butter with fork or pastry blender until mixture resembles course crumbs. Sprinkle over batter in muffin cups.
  5. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in center of a muffin comes out clean. Cool in pans on wire rack. These muffins freeze really well, and re-heat in the microwave successfully. Hope you enjoy!!
