Cheesy Turkey Meatloaf and Spinach Salad

Ingredients
2 pounds ground turkey
2 eggs
1 cup milk
1 cup Italian bread crumbs
1 cup cheese (I used shredded cheddar and monterey jack)
1 teaspoon salt
1/4 teaspoon pepper
1/4 minced onions
1/2 cup ketchup

Directions
Preheat oven to 400 degrees.

In a bowl, combine turkey, eggs, milk, bread crumbs, onions. Fold in cheese. Season with salt and pepper. Transfer to greased loaf pan. Top with ketchup. Bake for 45 min-1 hour.
Spinach Salad
Ingredients

Baby Spinach
Mushrooms, sliced
Red Onion, diced
Parmesan Cheese
Balasamic Vinagrette
Pecans

Peanut Butter Banana Muffins

Ingredients

1/2 cup butter, softened
1 cup white sugar
2 eggs
1/2 cup peanut butter
2-3 mashed ripe bananas
2 cups all purpose flour
1 teaspoon baking soda

Directions
Preheat oven to 325 degrees. Cream together softened butter and sugar in bowl. Add eggs, beat well. Stir in peanut butter, bananas, flour, baking soda until blended. Pour into muffin tins. Bake for 20-30 minutes or until done.


Yum!

You can also make this in a loaf and bake for about an hour.

Artichoke, Olive, Mushroom, and Onion Pizza




Ingredients

Artichokes
Mushrooms
Black Olives
Red Onion
Pizza Crust Mix
Pizza Sauce
Mozzarella Cheese
Monterey Jack Cheese
Turkey Pepperoni

Mix crust according to package. Spread on greased pan. Top with tomato sauce, cheese, artichokes, onion, olives, mushrooms, and pepperonis. Bake at 425 for 15-20 on lowest rack.

Stuffed Shells

Ingredients

1 box jumbo stuffed shells
1 24 oz. container of cottage cheese
1 jar of tomato sauce
1 egg
1/4 cup parmesan cheese
2 cups grated cheese (I used an Italian blend.)

Directions
Cook pasta according to box. Drain and cool.
Combine egg, cottage cheese, 1/4 cup parmesan cheese, and 1/2 cup grated cheese in bowl.
Fill each jumbo shell with a spoonful of cheese mixture.
Place in casserole dish. Pour sauce over shells, top with remaining cheese. Bake for 20 minutes at 350 degrees.




Cake Balls

Ingredients

Cake mix (whatever kind you like)
Can of frosting (Again, whatever kind you like)
Almond Bark (They make vanilla and chocolate.)

Bake cake according to package directions.

While cake is still warm, break into small pieces. Mix frosting and cake crumbs together in bowl and chill in refrigerator for an hour.
Roll cake mixture into balls. 

Melt almond bark and dip cake balls in until covered completely. Place on wax paper until almond bark is hardened. I like to put mine in the freezer because I think they taste good cold. Enjoy these yummy little bites!
