Turkey Enchilada Pie

 Ingredients:
1 spray cooking spray
3/4 pound uncooked ground turkey
1 medium onion, chopped
1 tsp chili powder
3 tbsp all purpose flour
1 cup fat free milk
1 can rotel
1/2 tsp cumin
10 tbsp low fat shredded cheese

Directions
Pre-heat oven to 350. In skillet, cook turkey, onion, and chili powder until cook through. Set aside. In same skillet, add flour. Gradually add milk and bring to a boil. Reduce heat to medium and simmer until thickened, about 2 minutes. Add turkey and cumin to flour mixture.

Wrap tortillas in damp paper towel and heat in microwave for 30 seconds. Place 1 tortilla in the bottom of a pie plate. Add 1/3 cup of turkey mixture on top of tortilla. Add 1/3 of the can of rotel and then 4 tbsp of cheese. Repeat again and top last tortilla with 2 tbsp of cheese. Cover pie plate with aluminum foil and bake for 15 minutes. Cut into 6 wedges.
1 serving is 5 WW points.

Greek Turkey Burger w/ Tzatziki Sauce

Ingredients:
Tzatziki Sauce:
- 1 container (6 oz) Greek Fat Free plain yogurt (They were out of Greek, so I just used plain nonfat yogurt.)
- 1/4 cup chopped cucumber
- 3 tablespoons chopped red onion
- 1 tablespoon chopped fresh dill weed
- 2 teaspoons fresh lemon juice
- 2 garlic cloves, minced
- ¼ tsp salt

Burgers:
- 1 lb lean ground turkey
- 1 cup crumbled fat free feta cheese (4 oz)
- 1/3 cup chopped red onion
- 1 tablespoon chopped fresh dill weed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 garlic cloves, minced
- 4 EarthGrains Whole Wheat Thin Buns
- 1 medium tomato, thinly sliced
- fresh lettuce leaves

Directions:
In small bowl, mix 1/2 cup yogurt and remaining sauce ingredients; refrigerate until serving. Heat gas or charcoal grill. In medium bowl, mix all burger ingredients and remaining yogurt. Shape mixture into 4 patties, about 1/2 inch thick.
Place patties on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning after 5 minutes, until thermometer inserted in center of patties reads 160°F. Place burgers in buns with tomato slices and sauce.
If you choose to broil your burgers instead, broil patties with tops about 6 inches from heat 4 minutes; turn patties. Cook 6 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F.
Place a patty on one of the sandwich thins, top with 1 tbsp of Tzatziki sauce, a few tomato slices and a few fresh lettuce leaves.

This is another awesome Weight Watchers recipe that doesn't taste like it! Tastes like something you'd get at a yummy Greek restaurant.
Entire recipe makes 4 burgers
Serving size is 1 Greek Turkey burger with bun, 1 tbsp Tzatziki sauce and lettuce/tomato
Each serving = 4 Point Total

Chicken Parmigiana

 Ingredients
For Chicken:
1 large egg   
1 Tbsp water   
1/3 cup dried bread crumbs (I used Italian bread crumbs)   
1/4 cup parsley, flat-leaf, chopped (I used Tuscan Spice mix)  
3 Tbsp Parmesan cheese, freshly grated   
1/8 tsp black pepper, freshly ground, or to taste   
    4 uncooked boneless, skinless chicken breasts (I used 2 breasts)


For the Pasta:
3/4 cup dried whole wheat penne pasta per serving
1 cup spaghetti sauce

Directions
Cook pasta according to package.
Preheat the oven to 400ºF. Spray a 1-quart shallow baking dish with nonstick spray.

Beat the egg with the water in a shallow bowl. Combine the bread crumbs, parsley, cheese, and pepper on a sheet of wax paper.

Dip the chicken breasts first in the egg mixture, then coat lightly on both sides with the bread crumb mixture, shaking off the excess, and place them in the baking dish. (Discard any leftover egg or bread crumb mixture.) Bake until cooked through, golden and crisp-edged, about 15 minutes. Yields one breast per serving. 
Serve with pasta and tomato sauce.

Oh, and this is a Weight Watchers recipe, too! But you'll never know, it tastes SO good! The chicken part has 5 WW points, then add your points for pasta and sauce. For me, it was 5 for the pasta and 2 for the sauce. 12 points total!

Simple Beef Stroganoff

 Ingredients
1 package egg noodles
1 pound ground beef
  1 can fat free condensed cream of mushroom soup (I actually ended up using 2 cans to make it creamier.)
1 tablespoon garlic powder
1/2 cup sour cream
salt and pepper to taste

Directions
  1. Prepare the egg noodles according to package directions and set aside.
  2. In a separate large skillet over medium heat, saute the ground beef over medium heat for 5 to 10 minutes, or until browned. Drain the fat and add the soup and garlic powder. Simmer for 10 minutes, stirring occasionally.
  3. Remove from heat and combine the meat mixture with the egg noodles. Add the sour cream, stirring well, and season with salt and pepper to taste.

White Bean Chicken Chili

 Ingredients
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese
 
Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, green chile peppers, cumin, oregano and cayenne.
 Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally. 
 Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

Chicken and Rice

 Ingredients
2-3 chicken breasts, cooked & shredded
1/2 medium yellow onion, chopped
2 cans of cream of mushroom soup
3/4 can of milk
Salt & pepper to taste
2 cups uncooked rice

Directions
Cook chicken and shred. Cook rice.
Place chicken in a pot, add soups, milk, onions, and pepper. Simmer. Remove from heat and serve over rice.
