For the cupcakes...
1 box yellow cake mix (only the mix, no eggs or oil)
1 20 oz can crushed pineapple (not drained)
Mix cake mix and pineapple with electric mixer until combined. Bake according to directions on cake mix.
For the icing...
1 8 oz box 1/3 reduced fat cream cheese
1 20 oz can crushed pineapple, drained
1/4 sugar
1 cup coconut
Combine all ingredients with hand mixer and top cupcakes.
